We’re kicking off the season with a new summer sip we just had to share!
This year’s cocktail is inspired by the juicy sweetness of fresh watermelon sprinkled with a little Tajín for that perfect sweet sour kick and a gentle hit of spice. It’s bright, refreshing and made for long, sun-soaked afternoons. The ultimate drink for a summer barbecue or Christmas gathering.

Ingredients
For the Cocktail
30 ml dry gin
Juice of 1/2 lime
4–6 mint leaves
1 handful cubed watermelon
90 ml tonic water or sparkling water
Ice
For the Sugar Rim
(Makes enough to coat 3–5 glasses)
2 tbsp sugar
1/2 tsp salt
1/4 tsp chilli flakes
Zest of 1/2 lime
1 lime wedge
1 tsp Tajín (optional but delicious)
METHOD
Prep the rim: Combine sugar, salt, chilli flakes and lime zest in a small bowl. Massage the zest through the mixture with your fingers.
Mix the cocktail: Add gin, watermelon, mint and lime juice to a shaker. Muddle well.
Shake: Add a little ice and shake vigorously.
Rim the glass: Run a lime wedge around the glass, then dip it into the sugar mixture.
Assemble: Fill the glass with ice, strain in the watermelon mix, and top with tonic or sparkling water.
Garnish: Add lime slices and a sprig of mint if you’re feeling fancy.
